To Glimpse or not? The Million dollar question...av

 On my twitter feed (   I seen a post from “Vogue Australia” regarding a new techie app for online daters.  Although, I had previously said that online dating is not my cup of tea anymore as I’ve been there done that and didn’t meet someone I would be compatible with just players, liers and weirdos. I did meet some that became friends and nothing more. Don’t tell me you are 6 ft and Italian & turns out you are 5’2 and middle eastern Lol!  When I asked him what happened because I had to… I was told he is half Italian Lol!  I’m a good sport so I went along the date only as friends he was already a turnoff for lying.
 When I lived in Tempe, AZ online dating was something I did because living in another state by yourself and not having much friends can get quite lonely. You can just do soo much shopping, dining out, working out, clubbing etc… 🙂  Most of my friends were colleagues from work and they were much older than me and bowling was their type of having a fantastic week. Bowling is a cool sport don’t get me wrong but I have been used to living the social life of dancing, social drinking, sporting events, traveling etc…. and I thought I can always bowl on a tuesday or wednesday not on a saturday night. My colleague tried to set me up with her boyfriend”s best friend who was divorced, on the chubby side and not my type. I did say “tried” as nothing happened. I appreciate the gesture but not my type of guy. 
Fast forward to now the year 2014 I had already decided to not do online dating however, when I came across this app I checked it out only out of curiosity. I had already seen other dating apps that were recommended in previous articles, blogs such as “Latina Magazine” and the apps were very superficial and it reminded me of “myspace” rating people if they were hot or not.  Didn’t like the fact that these other apps had your locations and it’s not a good safety measure. You never know who you are talking to! Yes, there are weirdooo’s out there.What I liked about “Glimpse” is that it’s linked to your instagram account so there is no need to fill out a questionaire, answer questions, write an “about me” section. They say pictures are worth 1,000 words and we all know pictures sell whether it’s your brand, company or yourself.

Instead of reading what people love to do such as camping, hiking, traveling etc… all you have to do is look at their app profile and see a collection of pictures and what their likes are and how they enjoy life. #nobrainer Now I know why it’s called “Glimpse” so you can Glimpse over to the app and see who interests you. You can send a smile and vise versa & if it’s reciprocated then you can start sending messages via the app.

According to Glimpse, For now, the accounts that users see are random, but Glimpse’s plan is to customize it based on location and other factors. One interesting thing I found about this app is that it’s available by “invitation” online. Is this some sort of VIP? Because no line needed I will just walk up 😉  I’m awaiting for the approval to my account. Was not invited, just signed up. So, well see how that goes 🙂 I find it very mysterious. Top Secret! Shhhhh!

I might do an update blog once I get approved by Glimpse and try it out for kicks to see if it’s a yay or nay! Heck, you can even share your business ideas and acquire leads… and if it’s Global even better. You can always gain more friends. I was told by one of many leaders @ my previous company to date people and see them as leads. Ummm, fail! Lol! The ones I considered just friends but would have lunch with wanted to take it to the next level and that simply didn’t go well with me. I don’t mix business with pleasure and thank God I never listened just to raise to a higher rank. My reputation is very important and I work hard not easy. Only way I will be with someone within the company is if it’s a relationship 🙂 In this profession we see a lot of power couples so if I do meet someone within an organization then so be it but in the meantime I am open to other areas too. I can’t imagine recruiting guys I’m dating and bringing them in the company and not having a dilemma! Hilarious!

Kombucha 411?

I’ve created a vlog on “Kombucha” and the positive aspects of it. I was introduced to this amazing bottle by an ex-boss who was an avid drinker and claimed my life would change!  Well 3 years later and I can’t say this bottle made miracles but indeed has made a great impact in my life. A healthier happier version of Miss Laura! 🙂  I consider myself an optomist but there are times when I would feel groggy and tired and need a pick me up and what better drink than good ol kombucha! I used to drink red bull, rockstar and strong strong coffee but I have replaced it with some K!

The benefits of this drink is that you feel healthier and happier. I hear people drink it when they are feeling under the weather and catching the cold, I drink it as a regular drink like orange juice. It’s my vitamin in a bottle.  Some bottles carry “chia seed” in them which is considered “runner’s food”  it’s a nutrient rich superfood that provides sustained energy for your body. To Black Eye Pea or not?

I have been preparing for the upcoming New Year and had recently posted a blog on “Black Eye Pea Soup” and how to cook this delish soup 🙂 I shared it and maybe some people did cook it and maybe some didn’t and my intention was to just share a healthy recipe to ring in the New Year! Now, if prosperity and abundance comes…. That is just the cherry on top! 🙂

If there is one thing I am known for is to be honest and I would lie to say that it didn’t meet my expectations. On the contrary, this year my soup came out super delicioso! There are many ways to cook it through different recipes the difference this year was adding a can of diced tomatoes, sauteing sausage with onions and garlic in grapeseed oil and adding Chicken bouillon for a kick! Major flavor!!

I don’t think I have ever been more proud of myself for cooking this soup then I am today. I can tell it’s going to be a GREAT 2014!!! My eyes rolled upon having a taste of the juice and went straight to my tummy! My friend used to tell me “Ok, Laura your ready for marriage” Lol! And my response used to be “Your crazy!” I don’t think my cooking will make any guy love me more. It is a plus and yes I have heard the way to a man’s heart is through the stomach but I think there additional factors…. cooking alone will not although I LOVE to cook! 🙂

For those that have not heard of this soup, Google it and you will find soo much history and why a lot of people cook it for the new year. I had never heard of it… How is a Latin chica going to know what is this soup and why we eat it? I was raised cooking latin dishes to american. Famous hamburgers, pasta etc…. Southern food? Only in the cooking channel but greatful my ex-boss introduced me to this yummy recipe because I have been cooking it ever since. There is something about eating healthy delicious beans with tons of flavor! I make mine spicy. Love Love spicy food.

Keep calm and drink champurrado!

During the holidays or on winter nights mexican champurrado is a great drink to feel warm and cozy on the fireplace. Grew up on this drink and I love it! Here is a simple way to make it.

Ingredients: 1 Champurrado mix, 3 cups of whole milk, 1 tsp of vanilla extract, 7 whole cloves, star anise, half of piloncillo, 1 whole chocolate of abuelita or chocolate Ibarra, (1 circle) 3 cinammon sticks, 1 can of nestle evaporated milk & sugar to your liking.

Instructions: Mix each ingredients one by one. I start with liquids first, whole milk, evaporated milk, champurrado mix, cloves, star anise, sugar, tsp of vanilla extract, cinnamon sticks, half of piloncillo, bar of chocolate. If you don’t have piloncillo substitute it with 1/2 cup of packed brown sugar. whisk it.

Heat over medium heat until boiling. Reduce heat and simmer uncovered whisking ocassionally about 10 minutes or until chocolate is completely melted and sugar is dissolved.

Serve immediately and Enjoy!

Black Eye Pea Soup for 2014!

Last year’s home made black eye pea soup. Very healthy, delicious and history says it brings prosperity!

A couple of years ago I was introduced to eating this healthy hearty bean soup other known as “Black eye peas” from an ex boss and had also seen an article on a woman’s business magazine! According, to southerners this should be the first thing to eat on NEW YEARS DAY for luck and prosperity throughout the year.

History says that this dates back to the Civil War. Black-eyed peas were considered animal food (like purple hull peas). The peas were not worthy of General Sherman’s Union troops. When Union soldiers raided the Confederates food supplies, legend says they took everything except the peas and salted pork. The Confederates considered themselves lucky to be left with those meager supplies, and survived the winter. Union soldiers near the town of Vicksburg, Va. burned all crops except the peas; thinking they were animal feed, the soldiers did not bother them. Residents discovered that the legume was the only thing left to eat; they adapted it into their diet, and black-eyed peas were therefore considered the food of good fortune. Peas became symbolic of luck.

Black eyed peas contain calcium (41 mg)  folate (356 mcg) protein (13.22 g) fiber (11.1g) and Vitamin A (26IU) among other nutrients, all for less than 200 calories.

Their shapes resemble coins, but most importantly they swell as you cook them, much as you want your wealth to expand. You can also add collard greens on the side to symbolize money and corn bread as gold. (Southern recipe)

You will need the following:


4   slices bacon or andouille sausage
1   medium onion, chopped
1   (16 ounce) package dried black-eyed peas, washed
1   (12 ounce) can diced tomatoes and green chilies (serranos or jalapenos)
1 teaspoon salt
1/2 teaspoon chili powder
1/2 teaspoon pepper
1 cup water


In a large saucepan, cook bacon until crisp or andouille sausage. Remove bacon, crumble and set aside to use as topping for peas.  Saute onion in bacon drippings until tender.  Add peas, diced tomatoes and green chilies, salt, chili powder, pepper and water.  Cook, covered, over medium heat for 45 minutes to 1 hour, or until peas are tender.  Add additional water of necessary.

Garnish with avocado (yummy)  This soup is really tasty as it is, but I LOVE avocado and add it to anything! 🙂 Enjoy with your loved ones!

Brining bring it!

And now we officially are in brining mode!  The video pretty much explains the process but I wanted to include a tip or two.  You can be as creative as you want, the point is to bathe the turkey.  What I do is get a clean pot, as you will notice the pot I used is pretty much used up but sturdy.  It’s been through tamaleville, birriaville & pozoleville but it works!  I put aluminium foil at bottom, put my turkey in and pour on the brine… herbs and all! Then get ICE COLD water in a pot as I did on video.  Some people put a bag of ice and fill it with water and add it to the brine. I just put water in the freezer ready when available. Each to their own liking 🙂

I have a large lid that comes along with this large pot. This pot is a tamale vapor pot with holes built in so I was able to use it as a cover lid. If you don’t have one, find something close to it. Be creative  🙂

Once lid is on top of turkey, it might shake from side to side (the lid not the turkey) Lol!  Soo, what I do is get a brick from my front yard, wash it &  cover it with aluminium foil and place it on top of the lid. It holds it in place so the turkey is submerged in brine.  If a little brine comes out it’s okay it doesn’t have to be perfect, it will still be delicious! 🙂

After 24-48 hours take out the turkey, rinse it from the inside of cavity and outside, legs and all just as your bathing a baby! Give it some Loveeeee, pat it dry with some towels and its ready to stuff it. I don’t stuff it with stuffing as it’s not sanitary you can get bacteria even though your going to cook it, but everyone is different if you have always done it that way then do it that way.  I prepare my stuffing as a side dish.

What I DO stuff the cavity with is herbs, spices and citrus fruits.  I include rosemary, slices of lemons & oranges, laurel leaves and put baby potatoes around the outside of turkey with sprigs of parsley.


Turkey brining a la mode!

In this blog, I will be writing about the brining process of a turkey.  After watching this video I couldn’t help but to see it runs in the family! Lol!  Actually, I was very tired I went to bed about 2 am but that is no excuse. I believe when you are passionate about something which to me is “cooking” then this is how my passion comes out.  Passion to me is Love! 🙂

So, now off to the nitty gritty!  Although I made a video and it describes what ingredients I used and how I made my brine, I will write it as well in case i missed something.


Half of cup of Kosher Salt

Half of cup of Sea Salt

1 Carton of Brown Sugar

2 Qts of Apple Juice or  Apple Cider or you can replace Apple Juice for 1 Carton of Chicken Broth.

2 oranges

2 lemons

Celery sticks (optional)

Seasonings (rosemary, pepper, thyme, sage, ginger, garlic, laurel leaves, onion, whole cloves, any dried ingredients you want)


You will add everything to a “pot”.  Apple Juice, Half cup of Kosher salt, Half cup of Sea Salt, package of Brown Sugar, 2 oranges cut in half and 2 lemons. You can add more if you want depends how fruity you want it. I use 2 of each.  Celery sticks and all dried ingredients: (rosemary, pepper, thyme, sage, ginger, garlic, laurel leaves, onion, whole cloves)

Boil to high heat and then to medium heat until it starts to smell really yummy.  Mix the salts well because these are the most important ingredients in making a brine. The turkey meat will dissolve with the salt and do not worry, the turkey will not be salty.  All it does is break down the meat to make it juicy.

One tip: If you are going to use “Chicken Broth” instead of the “Apple Juice” look at the carton to see if it’s  not “low sodium” if it’s not, then you will use less than half a cup of sea salt and kosher salt. The turkey then will be too salty.  So, to be on the safe side buy low sodium chicken broth.

Another tip: Kosher salt has less content of salt soo, it’s not salty. It’s not like regular table salt. This is why you are able to use 2 types of salts.

And that’s it! Your Done!  Just let it cool down or put it in the refrigerator so it can chill.
